What about If I want to add more fields to the directory, like Fax, mobile no. et?
Which tables, queries, screens, etc. shall I modify?

Unless there are Advanced Queries using custom structures, you should not need to worry about it. By changing the number of attributes of the entity, there's no need to change Tables and Screens - only if you need to "see them" or "edit them".
For any of those scenarios - or for anything else - just find the entity usages. You can then decide, for each "hit", if you want to update or not.
