As you can read in the operation tab of your service center for any eSpace: «Zones are used to fine tune eSpace distribution between Hub Nodes».

Nonetheless you can deploy eSpaces to different Application Pools, but you need to configure them manually. Go to IIS Console create the Application Pool and set the eSpaces (this would be IIS Virtual Directories) to use this Application Pool. At publication time the OutSystems Platform doesn't change the eSpaces' Application Pool so this is a long lasting configuration.
