I'm trying to figure out how to resize the canvas UI. I need a custom size, the tablet portrait is not big enough, how do I resize this to a custom size?

Your problem description is not clear to me. You are talking about a tablet portrait. A tablet has fixed pixels in height and width, how would you resize that?

No I don't think you can adjust this.
Of course when running your application in the browser you can use the browser developer tools to specify custom sizes.
