When testing an application I notice there is only emulators for iPhone and PC, with only Galaxy Note 8 to choose for android. How would I go about getting more mobile emulators installed to test on, specifically Samsung Galaxy S8 to S10?

There's no specific "emulator" as far as I'm aware, it's just a setting to specify a screen resolution and a "skin" around the "screen" portion of the Previewer. As long as some other option has the screen resolution of the Galaxy S8~S10, you should be fine.
There's also no way of installing extra configurations there, apart from platform updates that might do it.
