We've got an old mobile applications that depends on Cordova
I'd like to test it without having to keep deploying to mobile app stores
I saw in google results that I could use Outsystems Now as a way but can now see it's deprecated
What's the alternative path now?
I'm wondering why you need to deploy to "mobile app stores" for testing purpose?
You can just generate the apps using Service Studio. Select your app from the apps list in your environment, click on Distribute. Configure Native Platform settings for Android or iOS and generate it. Then download the new apps using the QR code.

My previous apps had all been emulator friendly and then someone handed me this module without any handover, so working it out as I go.
