I will try to answer your questions:
1. I guess you are talking about cancelling an OutSystems license, right? That is called the detach process. You can check for all the details about the process and what you need to take into account for mobile apps.
2. It is. You will need to remove the Intelectual Property Protection (IPP). You will be able to do it using the IPP Portal.
3. There are many examples of using AI in OutSystems applications. You can take a look at the Forge, for instance, where there are a few components on use cases using AI:
