Can you set the column alignment of an exported excel file during the export process?

not directly, you could use different structures and depending on your case, choose the according export structure

alternatively you could also make a general structure, which does not differentiate datatypes (ie. all text fields)
but id recomend trying to avoid option two, as far as possible
